KNOW HOW
- Serve local products composed by agricultural row materials and produced very close to the place of consumption (in the region);
- Respect eco-tourism principles: reducing gas emissions (little travel distances), avoiding the use of water, energy and packaging materials for conservation;
- Respect the seasonal freshness and safety of ingredients;
- Facilitate relationships among consumers and producers;
- Promote a healthy approach to food.
DESCRIPTION
Originally Catherine Resort was established 1975 by the family of Stefan Lichev as a family suburban hotel. Gradually the owners expand its sphere of activity and today the result is a modern combination of hospitality with the dairy business and agriculture. The hotel consists of rooms with shared beds for 60 people, lobby bar, a restaurant and a barbecue.
The main objective of the owners is to use products manufactured by companies in the Yambol region and neighborhood (up to 100 km). For this purpose, a network of suppliers of wine, meat products, vegetables and everything else necessary for the kitchen in the complex was established. Fish from their kennel complements the product range. Attractions are the dishes prepared from ostrich eggs also grown up in the complex. Attractive for guests and animals – pheasants, ostriches, ponies and even peacock, are farmed in the complex. The owners of the complex produce the dairy products served in the complex also locally. They process cow and sheep milk and produce different types of yogurt, cheese, even “mozzarella”- type cheese. Approximately 50% of the total amount of processed milk in dairy is own production. The rest of the milk is collected in the region. The Company owns a dairy farm, which produces yogurt, butter, cheese and other dairy products. The company owns pastures and cultivates land, on which the animal feed is grown. Thus a kind of closed production circle is built.
BENEFITS
The principle of supply of local goods and services is highly valued by both visitors from the region and guests from abroad and other parts of the country.
